Bread Upma





Ingredients:
1. Bread slices – 8
2. Onion – 1 
3. Tomatoes – 2
4. Red chillies – 2
5. GingerGarlic paste – ½ spoon
6. Chilli powder – ½ Tsp
7. Turmeric Powder - pinch
8. Curry  powder – 1/2 Tsp (optional)     
9. Salt as required
10. Curry leaves and cilantro chopped
11. Maggi masala chilli sauce or tomato sauce.  

How to make it:
1. Cut bread slices and toast it with little oil in a tawa. (This is optional, by doing this the bread doesn’t break to become mushy).
2. Heat oil in a pan and add urad dhal, mustard , red chillies and let it splutter. Then add onions and until transparent.
3. Add tomatoes n all the masala and salt mentioned above and cook until the tomatoes are mushy. 
4. Now add toasted bread pieces and mix well  by adding some sauce and let it cook for   5 mins. 
5. Garnish with Cilantro and serve hot with Onion raitha. It’s a wonderful evening snack.

Quesidilla


             A wonderful snack when you have left over chappatis  J. Quick to make and nice crispy munchy snack for anytime of the day ;). If you have chappatis and cant think of a curry really, this is a wonderful option. If you like chicken quesadilla, you can add chicken to this as well. All you need is to just gather all ingredients and put it on a sandwich maker! Tadaaa… it’s ready!!






Ingredients:
  1. Rotis – 3
  2. Onions  - 1 cup (finely chopped)
  3. Tomato - 1 chopped
  4. Crushed Pepper  - Pinch
  5. Salt - Pinch
  6. Green chilli - 2 (very finely chopped)
  7. Mozzarella cheese – 3 tsp (shredded)
  8. Sour Cream (optional)
  9. Sandwich Maker Or Panini maker

How to make it :

  1. Just take the chappatis and add come onions,tomatoes, green chillies , pinch of pepper and salt.
  2. Then sprinkle as much cheese you want and some cilantro for nice  fresh flavor.
  3. Then put this on your sandwich maker as shown in the picture as you get the splits and grill it.
  4. Serve this with any hot sauce or maggi sauce of your choice !!
Note : If you are adding chicken, make sure you cook it well and then add it to the quesadilla !

Bread Rolls



Ingredients:
  1. Bread slices – 6 or 7
  2. Potato boiled - 1cup
  3. Chopped boiled veggies(carrot,peas,cauliflower)  - ¾ cup
  4. Chopped green chilli  - 2
  5. Chilli powder – ¼ tsp
  6. Chat masala - 1/2 tsp
  7. Garam masala  - 1/2 tsp
  8. Mozzarala cheese – 3 tsp

How to make it :

  1. Mash all the above ingredients except bread n cheese to a smooth paste n keep aside for the stuffing. You can also sauté the stuffing for few mins with ¼ tsp olive oil.
  2. Remove the sides of the bread n join them with little water or egg wash, edge to edge overlaping ½ inch. Roll over the bread with a rolling pin to make it  flat.
  3. Then evenly spread the stuffing on the bread and make sure you leave the last 1 inch of the bread free for sealing the the roll at last.
  4. Sprinkle some cheese on the stuffing and roll it slowly end to end and finally seal the roll with some water or egg wash. Then wrap the roll in a aluminium foil and freeze it for like 30 mins.unwrap the foil,then cut the rolls into 1 inch thick slices. Take care not to break the roll.
  5. Take a kadai and toast the slice side to side until its golden brown in color. Optionally you can bake the slices for 5 – 10 mins in a 400F preheated oven until its golden brown.
  6.  Enjoy the spicy snack with ketchup!!

Sauted Eggs & Veggie


Sauted veggie is soo healthy and soo easy to make.Being spicy tangy in taste it can be served as appetizer or dry curry. Just take all veggie like carrots,cabbage,onions,green pepper etc you need to saute and saute it in a griddle. Just add some olive oil, salt, chilli sauce and some black pepper. Add beaten eggs and saute it. Sprinkle some lemon juice over it to give a fresh flavour. Adding egg is optinal . 

Spicy Grilled Pineapples


This is a one of the wonderful dishes Mr Chaks made it for me :) I just loved it... the tangy pineapple with spicy chillies and buttery taste.. was just awesome. Since this being the pineapple season.. i just wanted him to make it again n again :) Soo mouth watering

  1. Cut pine apple little big pieces.
  2. Heat the griddle and suate the pineapples with some butter. Then sprinkle some red chilli powder, salt and some black pepper.
  3. Let is darken a bit on both sides.
  4. Enjoy it hot :). I had it as a side for meen kolambu :)

Veggie Spring Rolls



Nalini and Sangee... i dedicate this recipe for you both.... Only after your complaints i posted this recipe :) Enjoy!!!



Ingredients:
  1. Egg roll sheets (refrigerator section)
  2. Cabbage shredded - 2 cups
  3. Carrot - 2
  4. Celery - 1 stick
  5. Capsicum - 1/2
  6. Spring onions - 1/2 cup
  7. Onions - 1/2
  8. Chilli garlic sause - 2 spoons
  9. Pepper powder - 1 spoon
  10. Soy sauce - 1 to 2 spoon
  11. Salt as required
  12. Lemon juice - 2 spoons
Recipe:
  1. Shred all vegetables. Then we need to steam the veggie and squeeze all water out of it. This water can be used as vegetable stock for any soups you make. Dont waste it :)
  2. Take a kadai and boil water and add veggie to boiling water and close it with the lid. The veggie will get softened in the steam.
  3. Once the veggie is steamed , chop it little and then squeeze the water out.
  4. Then season the veggie with pepper powder, chilli garlic sause, soy sauce,Some cumin powder(if needed - indian taste). Add salt if you need. All sauces will have salt in it.
  5. Then take the spring roll sheets, put the stuffing on one corner of the sheet, tightly roll it until middle of sheet. Then press edges and apply egg wash or water and fold it in.
  6. Then Again apply water / egg wash to other end and squeeze it hard and finish rolling.
  7. Deep fry it in oil until it color changes i.e golden brown.
  8. Serve it with any tamarind or chilli sauce. Enjoy!!

Samosa


Ingredients:
  1. All purpose flour - 1 cup
  2. Wheat flour - 1 cup
  3. Aaloo - 2 (boiled n cut into small cubes)
  4. Masala - cumin powder - 1/2 spoon, chilli powder - 1/2 spoon,coriande powder -1/4 spoon
  5. Green chilies - 2 -3
  6. Coriander leaves
  7. Salt to taste
  8. Oil to fry
Making Dough Sheets:
  1. Mix wheat flour and all purpose flour with some salt, 1 table spoon oil and water and knead the dough very soft.
  2. Let the dough rest for 15 mins.
  3. Then press the dough like romali roti (i.e) thin. Then cut it into 2 and slightly heat it in a hot pan. Just heat it both sides, dont cook it or dont change color.
  4. Then cut into in the size of sheets shown in the picture.
Making Stuffing:
  1. Take pan and add oil, little cumin seeds, allow it to splutter then add green chillies.
  2. Then add masala and add little water to that the masala doent get burnt.
  3. Then add cut potatoes and add salt to taste and cook it until raw smell goes off.
  4. Add coriander leaves and keep it ready.
Making Samosa:
  1. Take the sheet and spread water / egg wash on the sides and then roll it into a cone.
  2. Then take little stuffing and put it into the cone. Then spread water/egg wash on the remaining egde or side and fold it and keep it aside for frying.
  3. Repeat the same with all sheets. Make sure the edges stick really well.
  4. Now head oil and fry the samosa in medium heat oil so that i gets cooked well.
  5. Place it in a paper towel to remove extra oil.
  6. Serve it hot hot with Sauce or mint chutney.Enjoy!!
