Chocolate Cake

Many of my frenz have been asking me to post this recipe... Finally i got some time to post this. I have been real lazy these days....

Chocolate cakes are very yummy to look and eat. I made this for his bday and he loved it.Ingredients:
  1. Eggs - 4
  2. Sugar - 3/4 to 1 cup
  3. Vanilla Extract - 1 tsp
  4. Baking Powder - 1 tsp
  5. Oil/Butter - 3/4 to 1 cup
  6. Flour - 1 cup
  7. Coco Powder - 1 to 2 tsp
  8. Over Temp - Preheat for 180 degree and cook for 15 - 20 mins
Method:
  1. Take a large bowl and beat the eggs, Then add vanilla extract and beat.
  2. Now add sugar,baking powder and Oil/butter and beat well.
  3. Add flour and beat the it well and then add coco powder and beat it really well so the mixture is consistent.
  4. Now take a cake pan and grease it with Butter or Non stick Pan spray and then pour the mixture into the pan.
  5. Preheat oven in BAKE mode to 180 degrees and place the pan inside and cook for 15 - 20 mins. Check after 15 mins if the cake is cooked by inserting a knife.
  6. Then remove it after it is cooked and cool it for 10 -15 mins and remove it from the pan.
  7. Then apply a real rich layer of chocolate Icing of frosting.
  8. Then decorate it in what ever way you will love it. There are lot of icing and decorating stuff available in the market.

Veggie Spring Rolls



Nalini and Sangee... i dedicate this recipe for you both.... Only after your complaints i posted this recipe :) Enjoy!!!



Ingredients:
  1. Egg roll sheets (refrigerator section)
  2. Cabbage shredded - 2 cups
  3. Carrot - 2
  4. Celery - 1 stick
  5. Capsicum - 1/2
  6. Spring onions - 1/2 cup
  7. Onions - 1/2
  8. Chilli garlic sause - 2 spoons
  9. Pepper powder - 1 spoon
  10. Soy sauce - 1 to 2 spoon
  11. Salt as required
  12. Lemon juice - 2 spoons
Recipe:
  1. Shred all vegetables. Then we need to steam the veggie and squeeze all water out of it. This water can be used as vegetable stock for any soups you make. Dont waste it :)
  2. Take a kadai and boil water and add veggie to boiling water and close it with the lid. The veggie will get softened in the steam.
  3. Once the veggie is steamed , chop it little and then squeeze the water out.
  4. Then season the veggie with pepper powder, chilli garlic sause, soy sauce,Some cumin powder(if needed - indian taste). Add salt if you need. All sauces will have salt in it.
  5. Then take the spring roll sheets, put the stuffing on one corner of the sheet, tightly roll it until middle of sheet. Then press edges and apply egg wash or water and fold it in.
  6. Then Again apply water / egg wash to other end and squeeze it hard and finish rolling.
  7. Deep fry it in oil until it color changes i.e golden brown.
  8. Serve it with any tamarind or chilli sauce. Enjoy!!

Ridge Gourd Methi Curry


Ingredients:

  1. Ridge Gourd - 2 (Diced)
  2. Methi Leaves – 1 bunch
  3. Onion – 1 (Big)
  4. Chilli powder – 1 spoon
  5. Coriander powder – ½ spoon
  6. Turmeric Powder – ¼ spoon
  7. Oil,Salt – As required.

Recipe:

  1. Wash methi leaves and diced is finley.
  2. Take a pan, heat up oil and then add Urudh dal and mustard seeds and allow it to splutter. Then add curry leaves. Add onions and fry till its golden brown.
  3. Now add finely sliced ridge gourd and add turmeric,coriander,chilli powder & Salt. Let it cook for 2 mins with lid.
  4. Then add the methi leaves and let it cook for 5 mins or until ridge gourd and methi blends well into a single items.
  5. Simmer the stove for a few mins and garnish it with coriander leaver. Enjoy it with nice hot rice or chappathi.

Veggie Egg Fried Rice



Ingredients:
  1. Basmathi Rice - 2 cups (cooked)
  2. Mixed Veggie (Frozen) - 1 cup
  3. Broccoli & Cabbage - Boiled
  4. Garlic & ginger - 1 spoon (finely chopped)
  5. Green chili - 2
  6. Green capsicum - 1/2 minced
  7. Onion - 1/2 minced
  8. Green onions - 2 chopped
  9. Red chili flakes - 2 spoons ( as required)
  10. Soy sauce - 3 spoons
  11. Vegetable oil - 3 spoons
  12. Eggs - 3
  13. Pepper powder - 2 spoons
  14. Salt as required
Recipe:
  1. Take a pan, add oil and add the chopped ginger and garlic. Cook for a min and add green chilies and the red chili flakes.
  2. Then add Onions and cook till it is transparent.
  3. Add mixed veggie and soy sauce and allow it to cook for 2- 3 mins. Then add the minced capsicum and boiled broccoli and cauliflower.
  4. Take a skillet and beat eggs and cook the eggs on the skillet like omelet. Sprinkle some salt and pepper on it. Then take it and cut it coarsely.
  5. Add rice into the veggie and add the eggs, pepper and green onions.
  6. Add salt as required. Be careful since the sauce you add already has salt in it.
  7. Fried rice ready. Serve hot with raitha of your taste.

Samosa


Ingredients:
  1. All purpose flour - 1 cup
  2. Wheat flour - 1 cup
  3. Aaloo - 2 (boiled n cut into small cubes)
  4. Masala - cumin powder - 1/2 spoon, chilli powder - 1/2 spoon,coriande powder -1/4 spoon
  5. Green chilies - 2 -3
  6. Coriander leaves
  7. Salt to taste
  8. Oil to fry
Making Dough Sheets:
  1. Mix wheat flour and all purpose flour with some salt, 1 table spoon oil and water and knead the dough very soft.
  2. Let the dough rest for 15 mins.
  3. Then press the dough like romali roti (i.e) thin. Then cut it into 2 and slightly heat it in a hot pan. Just heat it both sides, dont cook it or dont change color.
  4. Then cut into in the size of sheets shown in the picture.
Making Stuffing:
  1. Take pan and add oil, little cumin seeds, allow it to splutter then add green chillies.
  2. Then add masala and add little water to that the masala doent get burnt.
  3. Then add cut potatoes and add salt to taste and cook it until raw smell goes off.
  4. Add coriander leaves and keep it ready.
Making Samosa:
  1. Take the sheet and spread water / egg wash on the sides and then roll it into a cone.
  2. Then take little stuffing and put it into the cone. Then spread water/egg wash on the remaining egde or side and fold it and keep it aside for frying.
  3. Repeat the same with all sheets. Make sure the edges stick really well.
  4. Now head oil and fry the samosa in medium heat oil so that i gets cooked well.
  5. Place it in a paper towel to remove extra oil.
  6. Serve it hot hot with Sauce or mint chutney.Enjoy!!

Chicken Lollypop


Ingredients:
  1. Chicken Wings - 1 lb
  2. Egg - 1 (beaten)
  3. Green Chillies - 2
  4. Bread Crumbs
  5. Corn flour
  6. Soy sauce
  7. Chilli powder - 1 spoon
  8. Pepper - 1 spoon
  9. Paneer - 3 spoons grated
  10. Salt to taste
How to cut the Wings:
  1. Take the wings and imagine it to be human hand ;). There will be three joints basically. Cut the small portion which is similar to our palm and throw it off.
  2. Take the remaining part and cut it in the middle i.e the elbow portion. Now you have 2 parts in hand which can me made to 2 chicken lolly pops.
  3. Now take one part, scarp the flesh at the slimmer edge and push it down with your hands so that the entire flesh is moved down into a lump.
  4. Now this gives u with a bone and a lump of flesh on the top. If the flesh is very little we can stuff it. Else leave it as it is.
  5. Repeat the above steps with the all the wings. Remember 1 wings = 2 chicken lolly pop.
Stuffing:
  1. Take the grated paneer, and some minced chicken and minced green chillies and mix it well and the stuffing is ready.
Recipe:
  1. Take the egg wash and mix chilli powder and corn flour with it. Keep the bread crumbs ready in a plate.
  2. Take the chicken lolly pop which needs to be stuffed and stuff it with little stuffing material so that it doesnt fall off.
  3. Then keep all the lolly pop's (stuffed and normal) in a bowl and add 2-3 spoons of soy sauce and chilli sauce and leave it for 20 mins.
  4. Now dip the stuffed and normal lolly pop's in the egg wash and immediately into the bread crumbs plate and press it a little with your hands so that the crumbs are coated properly on the surface.
  5. Fry the lolly pop in medium heated oil and suck away all extra oil on it using a tissue hence leaving it crispy and oil free.
  6. Enjoy eating it with any sauce of your taste.

Peanut Bottle Gourd Masala


Ingredients:
  1. Sliced Bottle gourd - 250 gms
  2. Onion - 1 medium
  3. Red Chilli - 4/5 (As required)
  4. Peanuts roasted - 1 cup
  5. Curry Leaves - 1 spring
  6. Salt
  7. Turmeric powder - 1/4 spoon
  8. Oil - 2 spoons
To Powder:
  1. Fry Red chillies and peanuts and powder it coarsely.
Recipe:
  1. Take a pan, add oil and add mustard and allow it to splutter and add curry leaves ,onions and fry it.
  2. Add sliced bottle gourd and turmeric powder, salt and allow it to cook.
  3. Then add the powder once after the veggie is cooked well and simmer it for another 5 mins
  4. Then serve it with hot rice or chappathi.Enjoy!!

Mushroom Capsicum Masala






Ingredients:
  1. Mushroom - 250 gms
  2. Onion - 1
  3. Tomato - 1
  4. Capsicum - 1 (Big size)
  5. Chilli powder - 1 spoon
  6. Coriander powder - 1 spoon
  7. Garam masala - 1/2 spoon
  8. Turmeric powder - 1/4 spoon
  9. Lime juice - 2 spoons
  10. Ginger garlic paste - 1.5 spoons
  11. Salt,Oil/butter as required
Recipe:
  1. Slice mushrooms and wash it throughly and keep it ready.
  2. Cut the onion into thin slices and also mince the tomato finely.
  3. Now place the pan in the gas top, add oil/butter 2 spoons and add some jeera and allow it to splutter. Then add the onions and let it fry until brown in color.
  4. Then add ginger garlic paste and fry till the raw smell goes off. Then add tomatoes to it and fry until it becomes soft.
  5. Now add all the powder ie chilli,coriander,garam masala and turmeric and fry for some time until raw smell goes off.
  6. And add the mushroom,capsicum and add salt as required and allow it to cook in simmer flame. Then once it is cooked add fresh lime juice and server it with Chappathi or Naan.

Butter Naan

Ingredients:
  1. All purpose Flour
  2. Egg - 1 (Optional)
  3. Quick Raise Yeast - 1 Tea spoon
  4. Sugar - 1 spoon
  5. Salt
  6. Oil - 2-3 spoons
Recipe:
  1. Take all purpose flour, required amount and keep it ready for making the dough.
  2. Take warm water in a bowl, mix quick raising yeast, and add a spoon of sugar to make the yeast active,add salt as required, add one egg and add 2 spoons of oil to the mixture.
  3. Add the mixture to the dough and knead the dough nice sticky. It should be nice sticky, thats the consistency. Then add one spoon oil on the dough and keep it aside for 20 mins.
  4. Then take nice big balls of the dough and add some flour to it and pat the ball with your palm so that it spreads equally in the shape of the naans u see in hotels :)
  5. The temperature for cooking naan is 500 C,broil mode and the time required is 2.5 mins.Keep tray as close to the coils.
  6. Keep the naan in the tray and put it in the oven and leave it for 2 mins not more than that. Then take the naan and turn sides and keep it for just 30 secs.
  7. Then take the naan and rub butter on both the sides and your butter naan is ready!! Enjoy it with some delicious side dish.

Chiken Tikka




Ingredients:
  1. Chicken breasts cut into cubes - 1/2 lb
  2. Capsicum - 1
  3. Tomato - 1
  4. Onion - 1
  5. Yogurt - 3 table spoons
  6. ginger Garlic paste - 1/2 spoon
  7. Red Chillie powder - 1/2 spoon
  8. Coriander powder - 1/2 spoon
  9. Cumin Powder - 1/2 spoon
  10. Kasoori methi powder - 1 spoon (dried methi leaves powder)
  11. Garam masala - 1/2 spoon
  12. Red coloring (Optional)
  13. Oil - 1 spoon
  14. Salt - as required
  15. Lime - 1 nos
Recipe:
  1. Cut chicken into small cubes and also cut capsicum,tomato and onion as the same size as chicken.
  2. Now take 1/2 spoon of chilli powder,salt,yogurt,coriander powder,kasthori methi powder,cumin powder,ginger garlic paste,garam masala and half lime and mix well. Then add red coloring if needed. Important thing the marination should be nice thick,No water!!
  3. Then marinate chicken and the cut tomato,capsicum & Onion in the above marination for about 2 hours in refrigtrator.
  4. Pre heat oven to 500 degree and put the chicken for about 25 - 30 mins.Brush some oil on top of chicken before you put it in oven.Make sure you turn side of chicken in about 10 - 15 mins.
  5. Remove chicken and u can add chat masala + mint leaves powder a little, onions and little lime juice for fresh flavour.
  6. Chicken Tikka is ready to be served!! Enjoy tasty delicious chicken with no or very lil oil!!

Beetroot Moong Dal Curry


Ingredients:
  1. Beetroot Grated - 2 cups
  2. Split Moong Dal - 1 cup
  3. Green Chilli - 5 or 6
  4. Onion - 1 Medium
  5. Mustard - 1/2 spoon
  6. Cumin seeds -1/2 spoon
  7. Coriander powder - 1/2 spoon
  8. Sesame Powder - 1/2 spoon
  9. Cumin Powder - 1/2 spoon
  10. Garam masala -  pinch
  11. Turmeric  - 1/4  spoon
  12. Oil - 1 spoon
  13. Salt - as required
  14. Hinge - Pinch
Recipe:
  1. Soak Moong dal for 30 minutes so that it becomes soft and easy to cook.
  2. Add oil i a pan, then add mustrad and once it splutters add cumin seeds and chopped green chillies ,curry leaves,hing and finely chopped onions and saute it for 2 mins.
  3. Then add moong dal and grated beetroot and add salt. Now close the pan and let the beetroot cook in its own juices.If required sprinkle little water. 
  4. After 10 mins of cooking with frequent stirring, open the pan and add cumin powder,coriander powder and roasted sesame powder. Adding sesame powder is optional but it gives a nice taste and a fresh flavour.
  5. Cook till the masala smell goes off.Now the beetroot curry is ready and can be served with Roti / white rice.

Chicken Tandoori



Ingredients:
  1. Chicken Drumsticks - 6 nos
  2. Yogurt - 6 table spoons
  3. ginger Garlic paste - 2 spoons
  4. Red Chillie powder - 3 spoons
  5. Coriander powder - 2 spoons
  6. Pepper Powder - 1 spoon
  7. Cumin Powder - 1 spoon
  8. Kasoori methi powder - 1 spoon (dried methi leaves powder)
  9. Garam masala - 1 spoon
  10. Turmeric - 1/2 spoon
  11. Red coloring (If needed)
  12. Oil - 1 spoon
  13. Salt - as required
  14. Lime - 1 nos
Recipe:
  1. Peel of the skin from the chicken and take a knife and cut gashes in the chicken so that the marination gets well into the chicken.
  2. Now take 2 spoons of chilli powder and 1/2 spoon of salt and mix well by adding little lime juice and rub the mix well on the chicken n into the cut gashes.
  3. Marination : Mix Yogurt,1 spoon chilli powder,coriander powder,kasthori methi powder,cumin powder,ginger garlic paste,turmeric,pepper powder,1/2 spoon salt,garam masala, little oil and half lime and mix well. Then add red coloring if needed. Important thing the marination should be nice thick,No water!!
  4. Then marinate chicken in the above marination for about 1-2 hours.
  5. Pre heat oven to 450 degree and put the chicken for about 25 - 30 mins. Make sure you turn side of chicken in about 10 - 15 mins.
  6. Remove chicken and u can add chat masala a little, onions and little lime juice for fresh flavour.
  7. Chicken tandoori is ready to be served!! Enjoy tasty delicious chicken with no or very lil oil!!
